• Dani's Surprise Apple Turnovers

    I thought I'd whip up some apple turnovers this morning, and while they're not very purdy, they turned out rather delicious if I do say so myself. I did this without the benefit of a recipe (gawd I'm getting cocky in the kitchen)... which is a good sign that I'm getting the hang of this whole baking thing. So for other baking newbs out there who want to try something relatively quick and easy -- and terribly yummy -- here's my foolproof recipe. Enjoy!


    Dani's Surprise Apple Turnovers

    INGREDIENTS

    The filling

    1 lg apple
    2 tbsp butter (I use salted)
    2 tbsp brown sugar
    1 tsp white sugar (to bind)
    1 tbsp flour
    1 tbsp water
    1/2 tsp vanilla extract
    healthy sprinkling of cinnamon

    The shells

    1/2 cup flour
    1/2 cup tenderflake
    2 tbsp water
    1 tbsp milk or cream (I used coffee cream)
    1 tsp coarse sugar

    DIRECTIONS

    Step 1

    • Preheat oven to 350C
    • Melt butter in small pan over low heat
    • Add 1 tbsp brown sugar
    • Core apple and cut into small slices; add to pan and stir into the mix
    • Add the other tbsp of brown sugar
    • Add the water, mix well
    • Add the white sugar, mix again
    • Add 1 tbsp flour, mix again
    • Turn heat up medium and stir until the mix thickens
    • Remove from heat and set aside.


    Step 2

    • Mix the shell ingredients together
    • I put the tenderflake in a bowl, the flour on top, then cut the lard into the flour
    • once the mix resembles something akin to corn meal in appearance, add the water
    • Roll into a big ball then divide into 4 smaller balls
    • Dust surface with flour
    • Using a roller pin, roll each ball into a round disk
    • Add apple mix to one half of the disk, leaving room to pinch the edges together
    • Fold over, gently pinch the edges together (I crimped them using a small fork)
    • Baste the turnovers with the milk/cream
    • Sprinkle the coarse sugar over top


    Step 3

    • Place in the oven and cook for approximately 20 minutes (depending on your oven)
    • Remove and cool for five minutes, if you can keep the member/s of your household at bay for that long
