  • Dani's Butter Chicken


    Good friends of ours introduced us to Butter Chicken when they treated us for dinner at a local restaurant specializing in Indian cuisine. For me, it was love at first taste and I couldn't get enough of the stuff! Considering my dad was a huge fan of Indian food (having spent time in Indian when in the British army), our family was often treated to his rendition of the curries he had enjoyed over the years. I can't believe Butter Chicken wasn't a part of this. I wish he was here today so I could share this with him.





    Dani's Butter Chicken
    Makes 6 servings.

    INGREDIENTS

    2 tbsp butter
    2 tbsp coconut oil
    3 lbs of chicken cut into bite-size pieces
    1 onion, diced
    3 cloves garlic, minced
    2 tsp curry powder
    2 tsp garam masala
    1 tsp turmeric
    1 (6 oz) can tomato paste
    1 (14 oz) coconut or almond milk
    1 cup sour cream
    1/4 tsp cayenne
    Salt and pepper to taste


    DIRECTIONS

    Put the butter (and coconut oil if you're using it) into the frying pan, then add the onion, garlic and chicken and cook until the onions are somewhat translucent — at which point the chicken has lost most of its pinkness.

    Add the tomato paste and spices, give it a good stir and let cook for another few minutes until blended well. Then chuck everything in the slow cooker, stir in the cream/milk and sour cream and mix it up well.

    Cook on high for about 30 mins, then turn down to low and cook for 4-6 hours. My slow cooker tends to cook at pretty high temperatures on low so you might want to adjust this.


    NOTES


    • As food supplies tend to be a challenge for us, I'll generally use whatever I have on hand substituting tomato sauce or a can of diced tomatoes for the tomato paste, or half-and-half cream, heavy cream or even cream cheese for the sour cream, etc.
    • For the purpose of the macronutrients listed below, I used chicken breast, but some friends swear by dark meat or a mixture of both.
    • As with all dishes, mix it up and try your own ingredients. Enjoy!
