  • Dani's Baked Butter Basa

    Jan 18, 2015 ~ This was my first attempt at baking basa in the oven. Previously I've prepared it in the slow cooker, cheating with pre-made sauces like coriander chutney and Jamaican jerk sauce. They've always turned out pretty good, but this one was hands-down the best of the lot. I'm not a big fan of basa, but the price was right and it carries sauces well.



    Dani's Baked Butter Basa


    INGREDIENTS

    2 large Basa fillets
    2 tsp Extra Virgin Olive Oil
    3 cloves Garlic - minced
    2 tbsp Onions - minced
    1/4 cup Butter - melted
    1/2 cup Old cheddar cheese
    1 tbsp Lemon juice
    Pinch Dill
    Pinch Cayenne
    Pinch Paprika
    Salt and pepper to taste

    Per serving:
    Calories 521 | Net Carbs 2 | Fat 45 | Protein 29


    DIRECTIONS

    1. Preheat the oven to 400 F.
    2. In a small frying pan, add the olive oil, minced garlic and onions and sauté on medium heat until tender (approx. 5 mins).
    3. Line a casserole dish with some of the melted butter.
    4. Place the basa fillets in the casserole dish and splash the lemon juice over top.
    5. Add the dill, cayenne and paprika to the remaining melted butter and stir until well combined. Pour the mixture over the basa fillets. Salt and pepper to taste.
    6. Bake in the oven for approximately 20 minutes.
    7. Pull the casserole dish out and turn the broiler on.
    8. Sprinkle the shredded cheese over the fish and return the casserole dish to the oven for about 5-10 minutes, depending on how quickly your broiler heats up.
    9. Garnish with fresh cilantro... just kidding Barb! (private joke: http://ihatecilantro.com/) I sprinkled some parsley flakes on top to make it look like I knew what I was doing; but if I had any available, I would have used fresh parsley -- not only for looks but to help stave off the bad breath that inevitably comes with eating garlic and onions.
