Dani's Baked Butter Basa
INGREDIENTS
2 large | Basa fillets | |
2 tsp | Extra Virgin Olive Oil | |
3 cloves | Garlic - minced | |
2 tbsp | Onions - minced | |
1/4 cup | Butter - melted | |
1/2 cup | Old cheddar cheese | |
1 tbsp | Lemon juice | |
Pinch | Dill | |
Pinch | Cayenne | |
Pinch | Paprika | |
Salt and pepper to taste |

DIRECTIONS
- Preheat the oven to 400 F.
- In a small frying pan, add the olive oil, minced garlic and onions and sauté on medium heat until tender (approx. 5 mins).
- Line a casserole dish with some of the melted butter.
- Place the basa fillets in the casserole dish and splash the lemon juice over top.
- Add the dill, cayenne and paprika to the remaining melted butter and stir until well combined. Pour the mixture over the basa fillets. Salt and pepper to taste.
- Bake in the oven for approximately 20 minutes.
- Pull the casserole dish out and turn the broiler on.
- Sprinkle the shredded cheese over the fish and return the casserole dish to the oven for about 5-10 minutes, depending on how quickly your broiler heats up.
- Garnish with fresh cilantro... just kidding Barb! (private joke: http://ihatecilantro.com/) I sprinkled some parsley flakes on top to make it look like I knew what I was doing; but if I had any available, I would have used fresh parsley -- not only for looks but to help stave off the bad breath that inevitably comes with eating garlic and onions.
